With asparagus plentiful this time of year, try to find local as it will be fresher and more tender. These wraps are low in calories since there is no bread or cracker. Yummy!

Serves 8

Ingredients:

16 asparagus spears

4 ounces soft goat cheese, room temperature

Sea salt and pepper to taste

16 Bibb lettuce leaves, washed and patted dry with a paper towel

8 thin slices deli roast beef, cut in half

16 slices cucumber, skin on

16 fresh chives, whole

Directions:

Cut off and discard tough ends of asparagus leaving 3-4 inches of tip.

Steam asparagus for 2-3 minutes until tender. Immediately place in ice water to stop the cooking process. Drain and pat dry with paper towels.

Spoon goat cheese into a piping bag. Pipe cheese down center of each lettuce leaf. Sprinkle with salt and pepper.

Arrange 1 roast beef slice, 1 asparagus spear, and 1 cucumber slice in each lettuce leaf. Wrap sides of lettuce around roast beef and vegetables and tie together with a chive
