MMMMM, sizzling steak on the grill says summer is here. Be sure to let the steak rest when you are done cooking so you don’t wind up with wilted greens from the steak juice.

Serves 4


1 tablespoon smoked paprika

2 teaspoons dried oregano

1 teaspoon dried thyme

½ teaspoon sea salt

½ teaspoon onion powder

½ teaspoon garlic powder

¼ teaspoon black pepper

1 pound lean boneless sirloin steak

8 cups mixed baby greens

1 cup sliced red onion

1 cup cherry tomatoes, halved

2 tablespoons fresh parsley, chopped

1 tablespoon red wine vinegar

1 teaspoon olive oil

1 teaspoon fresh lemon juice


Bring steak to almost room temperature. Combine the spices and rub both sides of the steak. Heat a grill to high.  Add steak; cook 5 minutes on each side or until desired degree of doneness. Allow to rest at room temperature for 10 minutes. Cut the steak across grain into thin slices.

Combine the greens and remaining ingredients in a large bowl. Toss well to coat. Divide evenly on 4 plates. Top with steak and serve.
