One of the most enjoyable treats of summer are homegrown tomatoes. I like to use heirloom varieties in this salad. Heirloom tomatoes are varieties that have not been tampered with for decades. They typically have wonderful flavor and interesting coloring. Mix them up for a beautiful salad.
1 tablespoon red wine vinegar
2 teaspoons extra virgin olive oil
¼ teaspoon sea salt
½ pound seeded peeled heirloom tomato
2 pounds heirloom tomatoes, cut into 1/4-inch-thick slices
1/2 teaspoon freshly ground black pepper
1/4 teaspoon sea salt
Place ingredients for the dressing in a blender or food processor and blend until smooth. Place dressing mixture in an 8-inch square baking dish; cover and freeze until firm, stirring twice during first 2 hours. Remove mixture from freezer and flake with a fork.
Arrange tomato slices on a platter. Sprinkle tomatoes with pepper and sea salt. Top with frozen dressing flakes. Garnish with fresh basil leaves if desired. Serve immediately.
