1 cup uncooked krithari (orzo)
3 cups sliced grilled chicken breast
1 ½ cups mixed baby greens
1 cup grape tomatoes
¼ cup sliced red onion
1 can artichoke hearts, chopped
1 teaspoon chopped fresh oregano
2 tablespoons red wine vinegar
1 tablespoon extra virgin olive oil
1/8 teaspoon sea salt
1/8 teaspoon black pepper
2 ounce goat cheese log, sliced
Cook the krithari according to package directions and drain well.
Combine krithari, chicken, greens, tomatoes, onions, artichokes, and oregano in a large bowl and toss well.
Combine vinegar, oil, salt, pepper in a blender and blend well. Pour dressing over salad and toss to coat. Divide salad evenly onto 4 plates.
