I made this dish once and nobody could guess that it was Brussels sprouts! Of course, adding avocado to just about anything makes it tasty!

Serves 4


1 pound Brussels sprouts, trimmed and quartered

1/2 cup grape seed oil

2 cloves garlic, minced

2 small red onions, diced

1  avocado, diced

1 cup sun dried tomatoes, cut into thin strips.

Sea salt

Freshly ground pepper


In a large skillet, heat the oil over medium high heat. Add the garlic and onions and sauté until tender. Add the Brussels sprouts and continue to cook until wilted. Add the avocado and sun dried tomatoes and continue to cook until heated through.
