These keftedes are a unique alternative to mashed potatoes. You can make the mixture ahead of time, but fry at the last minute.
1 cup plus 2 tablespoons flour
1 teaspoon baking powder
2/3 cup half and half
2 large eggs, beaten
2 tablespoons melted butter
Grape seed oil for frying
Combine flour and baking powder. Add milk, eggs, and butter. Stir well. Add potatoes and combine.
Heat 2 inches of oil in a pan. Drop by tablespoons into hot oil. Fry until golden on both sides. Drain on paper towels.
