This is a great, hearty dish that can be done in a slow cooker overnight. It is, hands down, the best oatmeal I have ever had!
1 cups steel cut oatmeal 1 3/4 cups water (2 cups if using steel cut oats)
2 cups apple juice
1/3 cup brown sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 small apple, peeled and diced
Combine all ingredients in a 4 quart crock pot. Turn on low and cook for 8 hours, overnight. Serve with a sprinkle of cinnamon.
